In a nutshell, infrared burners heat food directly with infrared heat waves. Whereas traditional gas burners ignite a flame, which heats the surrounding air, which in turn heats your food.
It may not sound like much, but in practice it can make a big deal. The most notable instance would be grilling in the wind - infrared burners are virtually unaffected by wind. Also, they tend to produce the a more consistent & uniform heat compared to traditional burners.
